I’m really rather pleased with how these turned out as I wasn’t even sure if I was going to like them, having never tried pumpkin before. But I figured in cake form was the safest way to try it out. The verdict from everyone that has tried them has probably been the best I’ve received so I think that proves they’re pretty darn yummy! I added in white chocolate chips because I was a little afraid it wouldn’t quite be sweet enough for me but these are completely optional.

INGREDIENTS
CAKE MIX

CREAM CHEESE FROSTING 4oz salted butter, softened 4oz cream cheese 3 cups icing sugar 1 teaspoon vanilla Food colouring if desired Decorations I used – |
*it seems the only place this is available in store is Waitrose (I asked in Asda, Tesco and M&S before popping into my local store that happens to be a Waitrose) but after a quick google it seems Ocado also have it. You could of course make your own from an actual pumpkin.
METHOD
CAKE MIX Mix together the flour, nutmeg, cinnamon, baking powder, baking soda, white chocolate chips and salt into a bowl. In another bowl, mix the pumpkin puree, caster sugar, Slowly add the dry ingredients to the wet. |
CREAM CHEESE FROSTING Whip the butter until the consistency of buttercream. Add the cream cheese and mix together thoroughly. Slowly add the icing sugar, mixing in well and add the vanilla. |
