When browsing for vegan brownies, I found this recipe from Jamie Oliver but I wanted to bake them as Christmas presents so I wanted to make them a bit more festive so I just added in a few things.
Ingredients
5 tablespoons sunflower oil (plus some for greasing the tin)
200g Orange dark chocolate (I use this one from Tesco)
170g self-raising flour
3 tablespoons of cocoa powder
180g caster sugar
1 teaspoon vanilla extract
230ml dairy-free milk (I used oat milk)
100g pecan nuts
I happened to have a bag of Gingerbread Topper from Wholeplus so I used that to mix in and to sprinkle on top. You could easily substitute this for just some mixed spice and/or ginger.
Method
1. Melt 150g of the chocolate
2. Sieve the flour and cocoa powder and mix with the sugar and spices
3. Add the vanilla extract, oil, milk and melted chocolate
4. Break up the remaining chocolate and stir into the batter with the pecans (saving some nuts for the topping)
5. Pour the mixture into a greased and lined tin (I used a 20x20cm tin)
6. Chop and sprinkle the left over pecans on top
7. Bake for 20 minutes at 180º until cooked but still gooey in the middle
These are really easy to make and so delicious! I cut them into small bite-sized pieces rather than brownie slices as they’re quite rich and a little bit crumbly so I found this the easiest way to eat them and just have a couple of them if I wanted more!
