I was browsing around the internet for some easy chocolatey recipes last week as I told Lee I would bake him something and he requested chocolate. I was originally going to attempt to make a Nutella pull apart bread but then I realised that I wasn’t really going to have time. Hence my frantic searching for quick and easy bakes on Pinterest.
When I saw the name of these Hot Fudge Chocolate Cheesecake Brownies, I knew they were the one. I usually adapt recipes somewhat or mix and match a couple of different ones. But this seemed pretty darn good to me. I did add some walnuts as an extra topping because I love nuts and chocolate together but it totally wasn’t necessary.
So I popped the items I didn’t have onto my shopping list (namely chocolate fudge frosting, though now I’m imagining a life where I have a constant supply in my house…) and got to baking.
Ingredients
Brownie Mixture
227g unsalted butter
220g milk chocolate
100g cocoa powder
450g granulated sugar
50g brown sugar
1 tsp vanilla extract
1/2 tsp salt
4 large eggs
125g self raising flour
100g chocolate chips/toppings of your choice (I used half white chocolate and half milk chocolate)
Cheesecake Mixture
227g soft cheese
400g chocolate fudge frosting or hot fudge sauce (I used Betty Crocker frosting)
Method
Firstly, make the brownie batter. Melt the chocolate and the butter and mix them together. Mix the cocoa powder into this and then add the sugars, vanilla and salt. Mix in the eggs one at a time. Stir in the flour until completely combined. Add half of the brownie mix to a 9×13″ pan.
Make the cheesecake mixture by mixing the soft cheese and the chocolate fudge frosting. Add this on top of the brownie in the pan.
Add the rest of the brownie mix on top of the cheesecake layer (this can be a little tricky, it’s best to add a dollop and carefully spread it out).
Bake for around 30 minutes at 170°C.
