Who doesn’t love a bit of Christmas baking? I decided to experiment a bit with this recipe as I hadn’t made it before but found a lovely sounding oatmeal biscuit dough recipe in one of my mother’s old cookbooks from the early 70s.
I made two little batches with my dough so that I could try out some with dark chocolate chips and some with a dash of nutmeg. I must say both tasted delicious!
Ingredients
100g plain flour
1/4 teaspoon salt
75g rolled oats
50g butter
100g caster sugar
2 tablespoons golden syrup
3 tablespoons evaporated milk
Optional
Cranberries (I used dried)
Walnut pieces
1 teaspoon nutmeg
Dark chocolate drops
Method
Pre-heat oven to 190°C, makes 8 cookies or more depending on size, bake time 10-15 mins
Mix together the dry ingredients (including nutmeg and/or chocolate chips if desired), then cream the butter, sugar and syrup and add gradually to the dry mix, slowly add the evaporated milk and mix in thoroughly. Shape into circles and place on a backing tray with greaseproof paper. To add cranberries and walnuts, make a well in the centre of the biscuits and place the fruit and nuts into it, pressing into the dough slightly to stay in place. Pop in the oven and sprinkle with icing sugar after cooling on a wire rack.
